I love to bake. I sometimes get into these crazy baking moods where I just want to bake for the sake of baking. My mother complains about how much I bake sweets and not enough real food. But sweets are real food!!! I have always been sort of a health nut, but being in college has made me more aware of my health. I workout nearly everyday, switching from dance to yoga, to biking or running. I try to keep in shape, not because I want to be skinny, but because I want to be healthy and live as long as the Lord wills.
So, I attempt to maintain and healthy diet, but I often treat myself… sometimes too much. But there are alternatives to my favorite treats! I stumbled across this recipe when I was trying to find a gift for my friend for her birthday. The hard part was finding one that did not contain any dairy products. Having a vegan friend makes me conscious of what I consume. She is inspiring, not only in her diet, but her life is also inspiring. So, I wanted to let her know how special she was to me by baking her some vegan brownies!
When people hear the word “Vegan” they often think that the food vegans eat are tasteless, boring, and just not appetizing. Now let me tell you, these are the best brownies ever! They are so moist, soft, and chocolaty. They do not contain any dairy product. No milk, butter, or eggs were harmed in the process of baking. To make them totally vegan, you would need to carefully select the chocolate chips to make sure they do not contain any trace of milk or eggs.
If you look at the recipe, you think AVOCADO?! GROSS.
The avocado and olive oil make them the moistest brownies ever. Avocados and olive oil are known as the “good fats.” You can’t even taste the avocado. If I gave you these brownies without telling you they were vegan, you would think they were real brownies. They contain sugar and chocolate chips to make taste like a brownie that contains unknown ingredients. I don’t feel bad for eating a couple of these because they’re not overwhelming sweet because of the cocoa powder and half cup of coffee. The recipe originally called for 3/4 cup of water, but the 1/2 cup of coffee + 1/4 cup of water made the brownies 10x better.
This is the first vegan brownie recipe I have tried, and it was a success! Once they’re baked and cooled, you look at them and think, “THESE ARE ACTUALLY GOOD FOR YOU?!” So if you’re watching what you eat, try these healthy and delicious brownies. Totally easy and totally better for you.
